Ingredients

Onion: 1 small, finely chopped

π» Vegetable Oil: 2 tbsp
π§ Salt and Pepper: To taste

Method
π³ Heat the Butter and Oil: In a large non-stick frying pan, melt the butter and oil over medium heat. This gives the dish a lovely golden crust!

Cook the Onion: Add the chopped onion and cook until soft and slightly golden, about 5 minutes.
π₯ Combine the Veg: In a bowl, mix the mashed potatoes, shredded cabbage (or sprouts), and softened onion. Season generously with salt and pepper.
π³ Shape and Fry: Press the mixture into the frying pan, flattening it into a thick pancake shape with the back of a spatula. Fry gently on medium heat for 6-8 minutes, until the bottom is crisp and golden.
π Flip Carefully: Turn the bubble and squeak over (you might need a plate to help!) and cook the other side for another 6-8 minutes until evenly browned.
π³ Optional Topping: In a separate pan, fry the eggs until the whites are set but the yolks are still runny.
