ONE-POT CREAMY CAJUN CHICKEN TORTELLINI
Ingredients:
2 boneless, skinless chicken breasts, cut into bite-sized pieces
2 tbsp Cajun seasoning
1 tbsp olive oil
3 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
1/2 cup grated Parmesan cheese
1/4 cup shredded mozzarella cheese
1 package (9 oz) cheese tortellini
1/2 tsp smoked paprika
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Directions:
1. Cook the Chicken: Heat olive oil in a large pot over medium-high heat. Season the chicken pieces with Cajun seasoning, salt, and pepper. Add the chicken to the pot and cook for 6-7 minutes, stirring occasionally, until golden brown and cooked through. Remove the chicken from the pot and set aside.
2. Prepare the Sauce: In the same pot, add the minced garlic and cook for 1-2 minutes until fragrant. Pour in the heavy cream and chicken broth, stirring to combine. Add the smoked paprika, Parmesan, and mozzarella cheeses. Stir constantly until the cheese is melted and the sauce becomes creamy and smooth.
3. Cook the Tortellini: Add the cheese tortellini to the pot, and stir to coat it in the creamy sauce. Let it simmer for about 5-6 minutes, or until the tortellini is tender and cooked through. You may need to add a little more chicken broth or water if the sauce thickens too much.
4. Combine the Chicken: Return the cooked chicken to the pot and stir everything together until the chicken is evenly distributed throughout the creamy Cajun tortellini.
5. Serve: Garnish with fresh parsley and serve immediately for a creamy, cheesy, and flavorful one-pot meal.
