Cajun Chicken Fettuccine Alfredo
Ingredients:
For the Cajun Chicken:
2 boneless, skinless chicken breasts
1 tbsp olive oil
1 tbsp Cajun seasoning
1/2 tsp garlic powder
1/4 tsp salt
1/4 tsp black pepper
For the Alfredo Sauce and Pasta:
8 oz fettuccine pasta
2 tbsp unsalted butter
3 garlic cloves, minced
1 1/2 cups heavy cream
1 cup grated Parmesan cheese
1/4 tsp ground nutmeg (optional)
Salt and black pepper to taste
1 tbsp chopped fresh parsley (for garnish)
Directions:
Cook fettuccine according to package instructions. Drain and set aside.
Rub chicken breasts with Cajun seasoning, garlic powder, salt, and pepper.
Heat olive oil in a skillet over medium-high heat. Sear chicken for 5–6 minutes per side until golden and fully cooked. Remove and let rest before slicing.
In the same skillet, melt butter and sauté garlic for 1 minute. Pour in heavy cream and bring to a gentle simmer.
Add Parmesan cheese, nutmeg (if using), salt, and pepper. Stir continuously until sauce thickens, about 4–5 minutes.
Toss in the cooked fettuccine until well coated in the Alfredo sauce.
Top with sliced Cajun chicken and garnish with fresh parsley. Serve hot.
