Rhubarb Fritters
Ingredients:
2 cups fresh rhubarb, finely chopped
1 cup all-purpose flour
1/4 cup granulated sugar
1 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1 large egg
1/2 cup milk
1 teaspoon vanilla extract
Vegetable oil for frying
Powdered sugar for dusting
Directions:
Prepare the Batter:
In a medium bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
In a separate bowl, whisk the egg, milk, and vanilla extract until combined.
Gradually add the wet ingredients to the dry ingredients, stirring until a thick batter forms.
Gently fold in the chopped rhubarb.
Fry the Fritters:
In a deep skillet or pot, heat vegetable oil to 350°F (175°C).
Carefully drop spoonfuls of the batter into the hot oil, frying 3-4 at a time.
Fry for 2-3 minutes per side or until golden brown and cooked through.
Use a slotted spoon to transfer the fritters to a paper towel-lined plate to drain excess oil.
Serve:
Dust the warm fritters with powdered sugar before serving.
