Cajun Salmon Pasta with Roll Biscuits :

Ingredients:

2 salmon fillets (skinless, boneless)

2 tbsp olive oil

1 tbsp Cajun seasoning

1 tsp garlic powder

1 tsp paprika

1 tbsp butter (for finishing)

For the Pasta:

8 oz penne pasta (or your preferred pasta)

1 tbsp olive oil

2 tbsp butter

2 cloves garlic (minced)

1 cup heavy cream

1/2 cup grated Parmesan cheese

1/2 tsp Cajun seasoning

1/4 tsp garlic powder

Salt and pepper (to taste)

For the Biscuits:

1 can refrigerated biscuit dough (or homemade if preferred)

2 tbsp butter (melted)

1/2 tsp garlic powder

1 tbsp fresh parsley (optional, for garnish)

Instructions:1. Prepare the Pasta:

Cook the pasta: Bring a large pot of salted water to a boil. Cook the penne pasta according to the package instructions, about 8-10 minutes, until al dente. Drain and set aside.

2. Make the Cajun Salmon:
Season the salmon: Rub the salmon fillets with olive oil, Cajun seasoning, garlic powder, paprika, salt, and pepper.

Cook the salmon: Heat a large skillet over medium-high heat. Place the seasoned salmon fillets into the skillet. Cook for about 4-5 minutes per side, or until the salmon is cooked through and flakes easily with a fork.

Finish with butter: In the last minute of cooking, add 1 tbsp of butter to the pan and spoon it over the salmon fillets. Remove from heat and set aside. Once rested, slice the salmon into bite-sized pieces.

3. Make the Pasta Sauce:

Sauté garlic: In the same skillet, melt 2 tbsp of butter over medium heat. Add minced garlic and sauté for about 1 minute, until fragrant.

Add cream and seasoning: Pour in the heavy cream and stir in Cajun seasoning, garlic powder, salt, and pepper. Let it simmer for 3-4 minutes until the sauce thickens slightly.

Add Parmesan: Stir in grated Parmesan cheese until melted and smooth.

4. Combine the Pasta:
Combine pasta and sauce: Add the drained pasta to the skillet and toss to coat with the creamy Cajun sauce.

Add salmon: Gently fold in the sliced Cajun salmon.

5. Prepare the Biscuits:

Bake the biscuits: Preheat the oven according to the instructions on the biscuit dough can. Arrange the biscuits on a baking sheet and bake as directed (usually 10-12 minutes).

Make garlic butter: While the biscuits bake, mix melted butter with garlic powder.

Brush with garlic butter: Once the biscuits are done baking, brush them with the garlic butter mixture. Garnish with fresh parsley, if desired.

6. Serve:
Plate the dish: Serve the Cajun salmon pasta on plates, accompanied by warm, buttery biscuits.
