Simple Avocado Egg Salad
Ingredients:
2 ripe avocados, cubed
3 hard-boiled eggs, sliced
1 cup cherry tomatoes, halved
1/4 cup red onion, thinly sliced
2 tbsp chopped fresh parsley or cilantro
Salt and black pepper, to taste
1 tbsp olive oil
1 tsp lemon or lime juice (optional)
Instructions:
1. Combine avocado, eggs, cherry tomatoes, and red onion in a bowl.
2. Drizzle with olive oil and lemon/lime juice.
3. Season with salt and black pepper.
4. Toss gently and garnish with parsley or cilantro.
5. Serve chilled or fresh.
