Creamy Garlic Chicken with Mashed Potatoes
Savor the rich flavors of tender chicken drizzled in creamy garlic sauce, perfectly paired with fluffy mashed potatoes! This delightful dish will become a staple at your dinner table.
Ingredients:
- 1 cup heavy cream
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 tablespoon butter
- 5 cloves garlic, minced
- Salt and pepper to taste
- 2 pounds potatoes, peeled and cubed
- 1/2 cup milk
- Fresh parsley, chopped (for garnish)
Instructions:
1. Start by bringing a large pot of salted water to a boil. Add the cubed potatoes and cook until fork-tender, approximately 15-20 minutes. Drain and return to the pot.
2. While the potatoes are cooking, heat the olive oil and butter in a large skillet over medium heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for about 6-7 minutes on each side, or until the chicken is golden brown and fully cooked. Remove from the skillet and set aside.
3. In the same skillet, add the minced garlic. Sauté for about 1 minute until fragrant, scraping up any bits from the bottom of the pan.
4. Pour in the heavy cream and bring to a gentle simmer. Let it cook for about 3-4 minutes until slightly thickened. Return the chicken to the skillet, coating it in the creamy garlic sauce. Allow it to simmer for another 2-3 minutes for the flavors to meld.
5. While the chicken is simmering, mash the drained potatoes with a potato masher or fork. Stir in the milk and season with salt and pepper to taste until you reach a creamy consistency.
6. To serve, spoon the mashed potatoes onto plates, top with the creamy garlic chicken, and drizzle any remaining sauce over the top. Garnish with chopped fresh parsley for a splash of color.
