Chocolate-Banana Cake

Ingredients:

For the Cake:

1 3/4 cups all-purpose flour

3/4 cup unsweetened cocoa powder

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

3 ripe bananas, mashed

3/4 cup granulated sugar

1/2 cup brown sugar

2 large eggs

1/2 cup vegetable oil

1/2 cup buttermilk

1 teaspoon vanilla extract

For the Whipped Ganache Frosting:

8 oz semi-sweet chocolate, chopped

1 cup heavy whipping cream

Optional Toppings:

Sliced bananas

Chocolate shavings

Directions:

Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.

In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.

In another bowl, combine mashed bananas, granulated sugar, brown sugar, eggs, oil, buttermilk, and vanilla. Mix until smooth.

Gradually add dry ingredients to the wet mixture, stirring until just combined.

Divide the batter evenly between the prepared pans and smooth the tops.

Bake for 25–30 minutes or until a toothpick inserted in the center comes out clean. Let cakes cool in pans for 10 minutes, then transfer to a wire rack to cool completely.

While the cakes cool, make the ganache. Heat cream in a small saucepan just until simmering. Pour over chopped chocolate and let sit 2 minutes, then stir until smooth. Chill for 1 hour, then whip with a mixer until light and fluffy.

Frost the cooled cakes with whipped ganache. Garnish with banana slices or chocolate shavings, if desired.
