Pumpkin Cheesecake Heaven Bars
Ingredients:
For the Crust:
1/2 cup unsalted butter
1/3 cup light brown sugar, packed
1 cup all-purpose flour
1/2 teaspoon pumpkin pie spice
Pinch of fine sea salt
For the Pumpkin Bar Layers:
1 cup pumpkin pie filling
11 ounces butterscotch chips
1 cup toffee bits
2 cups chopped pecans
14 ounces sweetened condensed milk
For Pumpkin Pie Spice:
2 teaspoons ground cinnamon
1/8 teaspoon nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon ground cloves
1/2 teaspoon ground allspice
Directions:
Preheat the oven to 350°F. Line an 11×7-inch baking dish with foil and lightly spray with cooking spray.
In a large mixing bowl, cream together the unsalted butter and light brown sugar until light and fluffy, about 2 minutes.
Add in the all-purpose flour, pumpkin pie spice, and a pinch of sea salt. Mix until the dough comes together without dry patches.
Press the dough evenly into the prepared baking dish to form the crust. Bake for 15 minutes or until lightly golden and set.
Remove the crust from the oven and evenly spread the pumpkin pie filling across the surface.
Layer the butterscotch chips, toffee bits, and chopped pecans on top of the pumpkin layer.
Drizzle the sweetened condensed milk evenly over the entire surface.
Return the dish to the oven and bake for an additional 30-35 minutes, until the top is golden brown and bubbling.
Allow the bars to cool completely in the pan. Then refrigerate until fully chilled before slicing into squares.
Store the Pumpkin Cheesecake Heaven Bars in the refrigerator until ready to serve.
