Cherry Dr. Pepper Cake

Ingredients:

**For the Cake:**
- 250g plain flour
- 200g granulated sugar
- 50g cocoa powder
- 1 tsp bicarbonate of soda
- 1/2 tsp salt
- 240ml Cherry Dr. Pepper (or regular Dr. Pepper with 1 tsp cherry extract)
- 120ml vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 120ml buttermilk

**For the Cherry Filling:**
- 300g canned cherry pie filling

**For the Frosting:**
- 250g unsalted butter, softened
- 500g icing sugar
- 60ml Cherry Dr. Pepper (or regular Dr. Pepper with 1/2 tsp cherry extract)
- 2-3 tbsp double cream
- 1 tsp vanilla extract
- Red food colouring (optional)

**For Decoration:**
- Fresh cherries (optional)
- Chocolate shavings (optional)

#### Instructions:

1. **Preheat the Oven:**
- Preheat your oven to 180°C (350°F). Grease and line two 8-inch round cake pans with parchment paper.

2. **Prepare the Cake Batter:**
- In a large bowl, sift together the plain flour, granulated sugar, cocoa powder, bicarbonate of soda, and salt.
- In another bowl, whisk together the Cherry Dr. Pepper, vegetable oil, eggs, vanilla extract, and buttermilk until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

3. **Bake the Cakes:**
- Divide the batter evenly between the prepared cake pans.
- Bake for 25-30 minutes, or until a toothpick inserted into the centre of the cakes comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.

4. **Prepare the Frosting:**
- In a large bowl, beat the softened butter until creamy.
- Gradually add the icing sugar, beating until smooth and fluffy.
- Add the Cherry Dr. Pepper, double cream, and vanilla extract, and beat until well combined. Add red food colouring if desired.

5. **Assemble the Cake:**
- Place one cake layer on a serving plate and spread a layer of cherry pie filling on top.
- Place the second cake layer on top of the cherry filling.
- Spread the frosting over the top and sides of the cake, smoothing it out with a spatula.

6. **Decorate the Cake:**
- Decorate with fresh cherries and chocolate shavings if desired.
