Savory Bacon Mushroom Swiss Cheese-Stuffed Meatloaf
Ingredients:
1 pound ground beef
1/2 pound ground pork
1/2 cup breadcrumbs
1/4 cup milk
1 egg
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 teaspoon dried oregano
1 teaspoon Worcestershire sauce
Salt and black pepper to taste
4 slices Swiss cheese
1/2 cup cooked bacon, chopped
1/2 cup mushrooms, finely chopped
1 tablespoon olive oil
1/4 cup ketchup
2 tablespoons Dijon mustard
Directions:
Preheat the oven: Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
Prepare the filling: Heat olive oil in a skillet over medium heat. Add the chopped mushrooms and cook for 4-5 minutes until soft and browned. Add the chopped bacon and cook for another 2 minutes, then set aside to cool.
Mix the meatloaf base: In a large bowl, combine the ground beef, ground pork, breadcrumbs, milk, egg, garlic powder, onion powder, oregano, Worcestershire sauce, salt, and pepper. Mix everything together until well combined.
Assemble the meatloaf: Lay out a piece of parchment paper and flatten the meat mixture into a rectangle about 1/2 inch thick. Place the Swiss cheese slices over the meat, followed by the bacon and mushroom mixture.
Roll the meatloaf: Carefully roll the meat mixture up, encasing the cheese and filling inside. Pinch the ends to seal the roll.
Bake: Transfer the stuffed meatloaf onto the prepared baking sheet and bake for 45-50 minutes or until cooked through and the internal temperature reaches 160°F (71°C).
Glaze (optional): In a small bowl, mix the ketchup and Dijon mustard together and spread over the top of the meatloaf during the last 10 minutes of baking for a flavorful glaze.
Serve: Let the meatloaf rest for 10 minutes before slicing. Serve with your favorite side dishes.
