Saffron Dream Kulfi – Ooh, A Royal Journey into Creamy Exotic Indulgence!
📋 Ingredients
● 2 cups full-fat milk
● 1 cup heavy cream
● 1/2 cup sweetened condensed milk
● 1/4 cup sugar
● 1/2 teaspoon ground cardamom
● Pinch of saffron strands (optional, for that authentic flair)
● 1/4 cup chopped pistachios (optional, for a delightful crunch)
● 1 tablespoon rose water or kewra essence (optional)
📝 Instructions
1: Prepare the Milk Mixture: In a heavy-bottomed pan, heat the full-fat milk over medium heat. Stir frequently and let it simmer until the milk reduces by about one-third (approximately 15–20 minutes).
2: Add Cream & Sweeteners: Once reduced, add the heavy cream and sweetened condensed milk. Stir well and continue cooking on low heat for another 10–15 minutes until the mixture thickens. Add the sugar and stir until completely dissolved.
3: Infuse the Flavors: Stir in the ground cardamom and saffron strands (if using). Then add the rose water or kewra essence for that aromatic touch. Let the mixture simmer for an additional 5 minutes to allow the flavors to meld.
4: Cool the Mixture: Remove the pan from heat and let the kulfi base cool to room temperature. For a smoother texture, you can strain out any spice remnants.
5: Freeze the Kulfi: Pour the cooled mixture into kulfi molds or popsicle molds. Optionally, mix in chopped pistachios for added crunch. Cover and freeze for at least 6 hours or overnight until firmly set.
6: Serve & Enjoy: To easily remove the kulfi, dip the molds briefly in warm water. Serve directly from the molds, garnished with extra pistachios or crushed rose petals if desired. Enjoy your luxurious, exotic treat!
