No-Churn Rocky Road Ice Cream
A creamy, chocolatey delight packed with marshmallows, nuts, and chocolate chunks—made with just a few simple ingredients!
Ingredients
🔹 For the Ice Cream Base:
2 cups heavy whipping cream (cold)
1 can (14 oz) sweetened condensed milk
½ cup unsweetened cocoa powder
1 teaspoon vanilla extract
Pinch of salt
🔹 Mix-ins:
1 cup mini marshmallows
½ cup chopped almonds (or walnuts)
½ cup chocolate chunks or chocolate chips
Instructions
1️⃣ Make the Chocolate Base:
In a large mixing bowl, whisk together sweetened condensed milk, cocoa powder, vanilla extract, and salt until smooth.
2️⃣ Whip the Cream:
In a separate bowl, beat the heavy whipping cream with a hand mixer (or stand mixer) until stiff peaks form.
3️⃣ Combine:
Gently fold the whipped cream into the chocolate mixture until fully combined. Be careful not to deflate the mixture!
4️⃣ Add the Mix-ins:
Fold in the mini marshmallows, chopped nuts, and chocolate chunks.
5️⃣ Freeze:
Pour the mixture into a loaf pan or freezer-safe container, smooth the top, and cover.
Freeze for at least 4-6 hours, or until firm.
6️⃣ Scoop & Enjoy!
