Chocolate-Covered Mint Patties
Ingredients:
๐ซ Dark chocolate,
๐ฌ Powdered sugar,
๐ฟ Peppermint extract,
๐งด Coconut oil,
๐ฅ Heavy cream (for melting chocolate),
๐ง Pinch of salt (optional)
Directions:
1๏ธโฃ In a medium-sized bowl, combine powdered sugar and peppermint extract. Add a splash of water (or a few tablespoons of milk) until a thick dough forms.
2๏ธโฃ Roll the mixture into small balls and then flatten each ball into a patty shape using your hands.
3๏ธโฃ Arrange the patties on a baking sheet lined with parchment paper and place them in the freezer to chill for at least 30 minutes.
4๏ธโฃ While the patties are chilling, melt the dark chocolate and coconut oil in a heatproof bowl over simmering water or in the microwave in 30-second intervals, stirring in between.
5๏ธโฃ Once the patties have chilled, dip each one into the melted chocolate, coating it completely, then place it back on the parchment paper.
6๏ธโฃ Allow the chocolate to set at room temperature or in the fridge. Once the chocolate is fully hardened, enjoy your minty treat!
