Orzo with Roasted Vegetables

This Orzo with Roasted Vegetables is a light and flavorful side dish that is perfect for any occasion. The combination of orzo and roasted veggies like zucchini, bell peppers, tomatoes, and onions creates a vibrant dish that's easy to prepare and full of comforting flavors. The roasted vegetables intensify in flavor, making this a great meal prep option for a few days of tasty meals.

1 lb orzo
2 bell peppers
3 tomatoes
2 large zucchini
1 onion
4-6 garlic cloves
Salt and black pepper, to taste
¼ cup olive oil
1-2 tbsp fresh parsley, minced (or other fresh herbs)
Optional: lemon juice

Directions:
1. Bring a large pot of water to a boil to cook the orzo while prepping the vegetables. Preheat the oven to 475°F and heat a large rimmed baking sheet inside the oven.
2. Chop the bell peppers, tomatoes, zucchini, onion, and garlic. Toss the vegetables with olive oil, salt, and pepper.
3. Place the seasoned vegetables onto the preheated baking sheet and roast for 20-25 minutes. Broil for the last 5 minutes to get a nice char.
4. Cook the orzo according to package instructions. Drain and set aside.
5. Once the vegetables are done, mix them with the orzo and sprinkle with minced parsley. Add a squeeze of lemon juice if desired, and serve.
