Apple Crumb Bars

Ingredients:

For the crust and topping:
2 1/2 cups all-purpose flour
1/2 cup granulated sugar
1/2 cup brown sugar, packed
1 tsp cinnamon
1/2 tsp salt
1 cup unsalted butter, cold and cubed

For the apple filling:
4 cups peeled and diced apples (about 4 medium apples)
2 tbsp lemon juice
1/3 cup granulated sugar
1 tsp cinnamon
1 tbsp all-purpose flour

Directions:

Preheat oven to 350°F (175°C). Grease a 9x13-inch baking pan or line it with parchment paper.
In a large bowl, mix flour, sugars, cinnamon, and salt. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
Reserve 1 1/2 cups of the mixture for the topping and press the rest into the bottom of the prepared pan.
Bake the crust for 12–15 minutes, until lightly golden. Let cool slightly.
In another bowl, toss the diced apples with lemon juice, sugar, cinnamon, and flour. Spread the apple filling evenly over the baked crust.
Sprinkle the reserved crumb mixture evenly over the apples.
Bake for 40–45 minutes, or until the top is golden brown and the apples are tender.
Cool completely before slicing into bars for clean edges (or serve warm with ice cream!).
