🐣 Easter Cake Mix Cookie Bars πŸŽ‰
Ingredients
For the Cookie Bars:
1 box (15.25 oz/432g) Funfetti or vanilla cake mix
Β½ cup (115g) unsalted butter, softened
1 large egg
ΒΌ cup (60ml) milk
Β½ cup (80g) pastel sprinkles (plus extra for topping)
For the Glaze:
1 cup (120g) powdered sugar
2-3 tbsp milk
Β½ tsp vanilla extract
1-2 drops pastel food coloring (optional)
Optional Toppings:
Mini chocolate eggs
Crushed pastel-colored candies
Edible glitter
Instructions
1. Preheat and Prep:
Preheat your oven to 350Β°F (175Β°C). Line an 8x8-inch baking pan with parchment paper, leaving some overhang on the sides for easy removal.

2. Make the Cookie Dough:
In a large mixing bowl, combine the cake mix, softened butter, egg, and milk. Stir until a thick dough forms. Fold in the pastel sprinkles.

3. Bake the Bars:
Press the dough evenly into the prepared baking pan. Bake for 18-20 minutes, or until the edges are golden and the center is set. Let the bars cool completely in the pan.

4. Make the Glaze:
In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Add 1-2 drops of pastel food coloring if desired.

5. Decorate the Bars:
Drizzle the glaze over the cooled cookie bars. Immediately sprinkle with additional pastel sprinkles, mini chocolate eggs, or crushed candies. Add a touch of edible glitter for extra sparkle, if desired.

6. Slice and Serve:
Use the parchment paper to lift the bars out of the pan. Cut into squares and serve.
