Ingredients
For the Steak:
2 sirloin steaks (1-inch thick)
Salt & pepper, to taste
1 tbsp olive oil
2 tbsp butter
3 garlic cloves, smashed
2 sprigs fresh rosemary or thyme
For the Potatoes:
3β4 medium Yukon gold potatoes, cut into wedges
2 tbsp olive oil
Β½ tsp paprika
Salt & pepper, to taste
Fresh parsley, for garnish
Instructions
1. Roast Potatoes: Preheat oven to 425Β°F (220Β°C). Toss potatoes in olive oil, paprika, salt & pepper. Roast for 25β30 mins until golden and crispy, flipping halfway.
2. Cook Steak: Season steaks generously. Heat olive oil in a skillet over medium-high. Sear steaks 3β4 mins per side for medium-rare.
3. Butter Baste: Add butter, garlic, and rosemary. Baste steaks with melted butter for 1β2 mins.
4. Rest & Serve: Let steaks rest 5 mins. Serve with roasted potatoes and spoon garlic butter over the top. Garnish with fresh parsley.
