Italian Sausage & Spinach Soup
INGREDIENTS
1.5 pounds Italian sausage
2 cups onion diced
2 cups carrots peeled and chopped
4 cloves garlic minced
1 ear of sweet corn, cut from cob
1 cup all-purpose flour
5 cups chicken broth
1 can cannellini beans
10 ounces pasta cooked to al dente
salt to taste
black pepper to taste
1 teaspoon Italian seasoning
5 ounces spinach fresh
1 cup half & half
DIRECTIONS
1-Halfway grill the link sausages, then slice int0 bite size pieces.
2-In a Dutch oven using oil of your choice, finish browning the sausage, then put aside.
3-Add the onion and carrots to the Dutch oven and saute until they're soft. Add the garlic and cook 1 to 2 minutes or until its fragrant. Salt and pepper to taste.
4-Add the sausage back to the Dutch oven with the vegetables. Coat the mixture with flour and cook 1 to 2 minutes, stirring constantly.
5-Slowly add the chicken broth, while stirring. Cook until the mixture almost comes to a boil. Reduce the heat to simmer and allow to cook for 5 to 6 minutes.
6-Add the spinach, corn, and Italian seasonings. Allow to cook for 5-10 minutes.
7-Add the cooked pasta, cannellini beans, and half & half. Simmer 10-15 minutes.
8-Serve and enjoy
