Tennessee Onions
Ingredients:
4 large sweet onions
4 tablespoons unsalted butter, melted
1/4 cup olive oil
1 cup mozzarella cheese, shredded
1/2 cup Parmesan cheese, grated
1 teaspoon garlic powder
1 teaspoon dried parsley
1/2 teaspoon salt
1/2 teaspoon black pepper
Directions:
Preheat oven to 375°F (190°C).
Slice the onions horizontally into 1/4-inch thick slices. Carefully separate the layers and arrange them in a circular pattern on a parchment-lined baking sheet to resemble a rose.
Drizzle the onions with melted butter and olive oil.
Sprinkle garlic powder, salt, pepper, and half the Parmesan cheese over the onions.
Bake for 25-30 minutes, or until the onions are golden and tender.
Remove from the oven, top with mozzarella cheese and remaining Parmesan, then bake an additional 5-7 minutes, or until the cheese is melted and bubbly.
Garnish with dried parsley before serving.
