Lazy Day Lemon Cream Pie Bars

Ingredients:

For the Crust:
1½ cups all-purpose flour
½ cup powdered sugar
¾ cup unsalted butter, cold and cubed

For the Filling:
1 (14 oz) can sweetened condensed milk
4 large egg yolks
½ cup fresh lemon juice (about 3–4 lemons)
1 tablespoon lemon zest
½ teaspoon vanilla extract

Optional Topping:
Powdered sugar, for dusting
Whipped cream and lemon slices, for garnish

Directions:

Preheat oven to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper, leaving a bit of overhang for easy removal.

In a mixing bowl, combine flour and powdered sugar. Cut in the cold, cubed butter using a pastry cutter or fork until the mixture resembles coarse crumbs.

Press the mixture evenly into the prepared baking dish to form a crust. Bake for 18–20 minutes, or until the edges are lightly golden.

While the crust bakes, whisk together sweetened condensed milk, egg yolks, lemon juice, lemon zest, and vanilla extract in a medium bowl until smooth.

Pour the filling over the warm crust and return to the oven. Bake for 15–18 minutes, or until the center is set but still slightly jiggly.

Allow the bars to cool to room temperature, then refrigerate for at least 3 hours or until fully chilled.

Once chilled, dust with powdered sugar and garnish with whipped cream and lemon slices before serving. Cut into squares and enjoy!
