Chicken thighs, bone-in or boneless
Baby potatoes, halved
Carrots, chopped
Broccoli florets
Red bell pepper, diced
Olive oil
Garlic, minced
Italian herbs or mixed dried herbs
Paprika
Salt & pepper
Instructions:
Preheat oven. In a large bowl, toss chicken and veggies with olive oil, garlic, herbs, paprika, salt, and pepper. Spread everything evenly in a baking dish. Roast uncovered until the chicken is golden and cooked through, and the vegetables are tender and slightly caramelized. Serve hot right from the dish!
Note:
Add a squeeze of lemon before serving for brightness. Swap chicken thighs with drumsticks or breast pieces if preferred.
