Creamy Shrimp & Broccoli Noodle Bowl 🍤
Ingredients:
For the Shrimp:
1 pound large shrimp, peeled and deveined
1 tablespoon olive oil
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon salt
1/8 teaspoon black pepper
For the Noodles:
8 ounces rice noodles or your favorite noodles
1 tablespoon olive oil
1/4 teaspoon salt
1/8 teaspoon black pepper
For the Broccoli:
1 cup chopped broccoli florets
1 tablespoon olive oil
1/4 teaspoon salt
1/8 teaspoon black pepper
For the Creamy Sauce:
1/2 cup coconut milk
1/4 cup coconut cream
1 tablespoon red curry paste
1 lime, juiced
1 teaspoon fish sauce
1/4 teaspoon salt
1/8 teaspoon black pepper
Instructions:
Marinate the Shrimp: In a bowl, combine shrimp with olive oil, garlic powder, onion powder, salt, and pepper. Marinate for at least 30 minutes, or up to 2 hours.
Cook the Noodles: Cook noodles according to package directions. Drain and toss with olive oil, salt, and pepper.
Grill the Shrimp: Preheat grill to medium-high heat. Grill the shrimp for 2-3 minutes per side, or until cooked through. Let rest for 5 minutes before serving.
Steam the Broccoli: Steam broccoli florets until tender-crisp.
Make the Creamy Sauce: In a small saucepan, combine coconut milk, coconut cream, red curry paste, lime juice, fish sauce, salt, and pepper. Bring to a simmer and cook for 2-3 minutes, or until slightly thickened.
Assemble the Bowls: Divide noodles among bowls. Top with grilled shrimp, broccoli, and drizzle generously with the Creamy Sauce.
Tips:
You can use any type of shrimp you like for this recipe.
Adjust the amount of red curry paste to your desired spice level.
