Surf and Turf Platter with Cheesy Potato Cakes
Ingredients:
For the Grilled Lobster Tails & Shrimp:
4 lobster tails
12 large shrimp, peeled and deveined
2 tbsp olive oil
1 tsp garlic powder
1 tsp paprika
Salt and pepper to taste
2 tbsp fresh lemon juice
Fresh parsley, chopped (for garnish)
Lemon wedges (for garnish)
For the Beef Steaks:
2 beef steaks (such as ribeye or filet mignon)
2 tbsp olive oil
Salt and pepper to taste
2 tbsp balsamic glaze or steak sauce
For the Cheesy Potato Cakes:
2 large russet potatoes, peeled and grated
1/2 cup shredded cheddar cheese
1/4 cup grated Parmesan cheese
1/4 cup green onions, finely chopped
1 egg
1/4 cup breadcrumbs
Salt and pepper to taste
2 tbsp butter
Instructions:
Prepare the Lobster and Shrimp:
Preheat your grill or grill pan to medium-high heat.
Brush lobster tails and shrimp with olive oil and season with garlic powder, paprika, salt, and pepper.
Grill lobster tails for 5-7 minutes, shell side down, until they are opaque and lightly charred.
Grill shrimp for 2-3 minutes per side, until pink and cooked through.
Drizzle lobster and shrimp with fresh lemon juice and garnish with chopped parsley and lemon wedges.
Prepare the Beef Steaks:
Preheat a skillet or grill to high heat.
Season the steaks with olive oil, salt, and pepper.
Sear the steaks for 3-4 minutes on each side for medium-rare, or cook to your desired level of doneness.
Remove from heat and drizzle with balsamic glaze or steak sauce.
Make the Cheesy Potato Cakes:
Grate the potatoes and squeeze out excess moisture using a clean kitchen towel.
In a bowl, mix the grated potatoes, cheddar cheese, Parmesan cheese, green onions, egg, breadcrumbs, salt, and pepper.
Form the mixture into small cakes.
Heat butter in a skillet over medium heat and cook the potato cakes for 4-5 minutes per side until golden and crispy.
Serve:
Arrange the lobster tails, shrimp, beef steaks, and cheesy potato cakes on an elegant platter.
Garnish with fresh parsley and lemon wedges for a beautiful presentation.
