A rustic Tuscan tomato and bread soup—simple, hearty, and packed with Mediterranean flavor!

📝 Ingredients:
• 4 large ripe tomatoes, chopped (or 1 can peeled tomatoes)
• 2 cups stale country bread, cubed
• 2 cloves garlic, minced
• 1/4 cup olive oil
• 2 cups vegetable broth or water
Salt and pepper
• Fresh basil leaves
• Grated Parmesan (optional)

👩‍🍳 Instructions:
1️⃣ In a pot, heat olive oil and sauté garlic until fragrant.
2️⃣ Add chopped tomatoes, salt, pepper, and torn basil. Simmer 10–15 minutes.
3️⃣ Add bread cubes and broth. Stir and cook until the bread breaks down into a thick, creamy texture.
4️⃣ Simmer gently for another 10 minutes.
5️⃣ Drizzle with more olive oil and top with Parmesan if desired. Serve warm or at room temperature.
