Pineapple Upside-Down Sugar Cookies 🍍🍪
Ingredients:
1/2 cup butter, softened
1/2 cup sugar
1 egg
1 tsp vanilla extract
1 1/2 cups all-purpose flour
1/2 tsp baking powder
1/4 cup brown sugar
6 pineapple rings, cut into smaller pieces
6 maraschino cherries
Directions:
Preheat oven to 350°F (175°C) and grease a muffin tin.
Sprinkle brown sugar evenly into the bottom of each muffin cup.
Place a few pieces of pineapple and one cherry in each cup.
Make the cookie dough: Cream butter and sugar until light and fluffy. Add egg and vanilla, mixing well.
Whisk flour and baking powder, then gradually add to the wet ingredients, mixing until a dough forms.
Scoop dough and gently press it over the pineapple mixture in each muffin cup.
Bake for 12-15 minutes until golden brown.
Cool for 5 minutes, then invert onto a baking sheet to reveal the caramelized pineapple topping.
