Orange Dreamsicle Salad
Ingredients:
- 4 large oranges, peeled and segmented
- 1 cup vanilla yogurt
- 1/2 cup mini marshmallows
- 1/4 cup shredded coconut
- 1/4 cup chopped pecans
- 1 tablespoon honey
- 1 teaspoon vanilla extract
- 1 cup crushed graham crackers
Directions:
1. In a large mixing bowl, combine the vanilla yogurt, honey, and vanilla extract. Stir well until smooth.
2. Gently fold in the orange segments, mini marshmallows, shredded coconut, and chopped pecans.
3. Sprinkle the crushed graham crackers over the salad and mix lightly to incorporate without crushing the crackers too much.
4. Chill the salad in the refrigerator for at least 1 hour before serving to allow flavors to meld and the salad to set.
5. Serve cold as a refreshing dessert or side dish.
