Cheese Crust Breakfast Pizza
Ingredients:
- 2 cups shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 4 large eggs
- ½ lb (225 g) breakfast sausage, cooked and crumbled
- 1 cup shredded mozzarella cheese (for topping)
- ½ cup shredded cheddar cheese (for topping)
- ¼ cup red onion, diced (optional)
- 1 tbsp fresh parsley or chives, chopped
- 1 tsp red pepper flakes (optional, for heat)
- Salt and black pepper to taste
Directions:
1. Preheat oven to 425°F (220°C).
2. Line a baking sheet with parchment paper and spread the 2 cups of shredded mozzarella and 1 cup cheddar evenly to form the crust.
3. Bake the cheese crust for 8-10 minutes or until golden and crispy around the edges.
4. Remove from oven and carefully crack the eggs over the cheese crust, spacing them evenly.
5. Sprinkle cooked sausage, remaining shredded mozzarella and cheddar over the top.
6. Add diced red onion, fresh parsley or chives, red pepper flakes, salt, and black pepper as desired.
7. Return to oven and bake for another 8-10 minutes, or until eggs are cooked to your preference.
8. Remove from oven, let cool for a minute, then slice and serve immediately.
