Toffee Peanut Clusters
Ingredients:
- 1 cup semi-sweet chocolate chips
- 1 cup butterscotch chips
- 1 tablespoon vegetable oil or shortening
- 2 cups roasted lightly salted peanuts
- 1 cup Heath toffee bits
Directions:
1. Line a baking sheet with parchment paper or a silicone baking mat.
2. In a microwave-safe bowl, combine semi-sweet chocolate chips, butterscotch chips, and vegetable oil or shortening.
3. Microwave in 30-second intervals, stirring well after each, until the mixture is smooth and fully melted.
4. Stir in the roasted peanuts and Heath toffee bits until evenly coated with the melted chocolate and butterscotch mixture.
5. Drop spoonfuls of the mixture onto the prepared baking sheet, forming clusters.
6. Refrigerate the clusters for at least 1 hour, or until firm.
7. Once set, store the clusters in an airtight container at room temperature or in the refrigerator.
