1 tablespoon ube extract (or 1 ½ tbsp ube powder + 1 tbsp extra milk)

1 teaspoon vanilla extract

Topping:

Zest of 1 lemon or calamansi

Optional: sprinkle of shredded coconut or sugar-free glaze

1. Preheat & Prep

Preheat oven to 350°F (175°C).
Line a loaf pan with parchment paper and lightly grease it with butter or coconut oil.

2. Mix the Dry Ingredients

In a large bowl, whisk together almond flour, coconut flour, baking powder, and salt.

3. Whisk the Wet Ingredients

In a separate bowl, beat the eggs, then whisk in melted butter, sweetener, almond milk, ube extract, and vanilla until smooth and creamy.

4. Combine & Blend

Once cooled, sprinkle lemon zest generously over the top.
