Keto Ube Loaf with Lemon Zest
🧂 Ingredients
Dry Ingredients:
1 ½ cups almond flour
¼ cup coconut flour
1 tablespoon baking powder
¼ teaspoon salt
Wet Ingredients:
4 large eggs
½ cup melted butter (or coconut oil for dairy-free)
⅓ cup granulated erythritol or monk fruit sweetener
½ cup unsweetened almond milk (or coconut milk)
1 tablespoon ube extract (or 1 ½ tbsp ube powder + 1 tbsp extra milk)
1 teaspoon vanilla extract
Topping:
Zest of 1 lemon or calamansi
Optional: sprinkle of shredded coconut or sugar-free glaze
👩🍳 Instructions
1. Preheat & Prep
Preheat oven to 350°F (175°C).
Line a loaf pan with parchment paper and lightly grease it with butter or coconut oil.
2. Mix the Dry Ingredients
In a large bowl, whisk together almond flour, coconut flour, baking powder, and salt.
3. Whisk the Wet Ingredients
In a separate bowl, beat the eggs, then whisk in melted butter, sweetener, almond milk, ube extract, and vanilla until smooth and creamy.
4. Combine & Blend
Gradually fold the wet ingredients into the dry.
Mix until you get a thick but pourable batter — add a tablespoon of milk if it’s too dense.
5. Pour & Bake
Pour the batter into your prepared loaf pan and smooth the top.
Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.
Cool completely before removing from the pan.
6. Finish with Lemon Zest
Once cooled, sprinkle lemon zest generously over the top.
It adds brightness and beautifully balances the richness of the ube flavor.

For extra moisture: Add 2 tablespoons of sour cream or Greek yogurt to the batter.
For a swirl effect: Mix a bit of the batter with matcha or cocoa powder and swirl it in before baking.
