Hearty Beef and Barley Soup
Ingredients:
- 1 lb stew beef, cut into bite-sized pieces
- 1 cup pearl barley
- 3 carrots, chopped
- 2 stalks celery, chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 1 can diced tomatoes
- 8 cups beef broth
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions:
1. In a large pot, brown the stew beef over medium-high heat until browned on all sides.
2. Add the onion and garlic, and cook until softened.
3. Stir in the carrots, celery, diced tomatoes, beef broth, and barley.
4. Bring the soup to a boil, then reduce heat and simmer for about 1 hour, or until beef is tender and barley is cooked through.
5. Season with salt and pepper to taste.
6. Serve hot, garnished with fresh parsley.
