Shepherd’s Pie Soup

Ingredients:
- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 carrots, diced
- 2 celery stalks, diced
- 1 tablespoon tomato paste
- 4 cups beef broth
- 2 cups frozen peas
- 4 cups mashed potatoes
- Salt and pepper to taste
- Fresh thyme, for garnish

Instructions:
1. In a large pot, cook the ground beef until browned. Add in the onion, garlic, carrots, and celery and cook until the vegetables are tender.
2. Stir in the tomato paste and beef broth. Bring to a simmer and let cook for 10 minutes.
3. Add in the frozen peas and let cook for an additional 5 minutes.
4. Season with salt and pepper to taste.
5. To serve, ladle the soup into bowls and top with a dollop of mashed potatoes. Garnish with fresh thyme.
