📋 Ingredients

For the Sponge Cake:
● 1 cup (120g) all-purpose flour
● ½ cup (45g) unsweetened cocoa powder
● 1 tsp baking powder
● ¼ tsp salt
● 4 large eggs, separated
● 1 cup (200g) granulated sugar
● ¼ cup (60ml) warm brewed coffee
● 2 tbsp vegetable oil
● 1 tsp vanilla extract

For the Coffee Syrup (Optional):
● ½ cup (120ml) brewed coffee
● 2 tbsp granulated sugar

For the Chocolate Ganache (Optional):
● ½ cup (90g) semi-sweet chocolate chips
● ¼ cup (60ml) heavy cream
🍳 Instructions
1️⃣ Prepare the Sponge Cake:

Preheat the Oven:
Preheat to 350°F (175°C). Grease and line an 8-inch round cake pan with parchment paper.

Combine Dry Ingredients:
Sift together the flour, cocoa powder, baking powder, and salt in a medium bowl.

Mix Wet Ingredients:
In a large bowl, beat egg yolks and sugar until pale and fluffy. Mix in the warm coffee, vegetable oil, and vanilla extract until smooth.

Incorporate Dry Ingredients:
Gradually fold the dry ingredients into the wet mixture until just combined.

Whip Egg Whites:
In another bowl, beat egg whites until stiff peaks form. Gently fold the egg whites into the cake batter in three batches, keeping the batter light and airy.

Bake:
Pour the batter into the prepared cake pan and bake for 20–25 minutes, or until a toothpick inserted in the center comes out clean.
Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

2️⃣ Prepare the Coffee Syrup (Optional):

Combine brewed coffee and sugar in a small saucepan.
Heat over medium heat, stirring until sugar dissolves. Let cool completely.

3️⃣ Make the Chocolate Ganache (Optional):

Heat the heavy cream in a small saucepan until it just starts to simmer.
Remove from heat and stir in chocolate chips until smooth and glossy. Cool slightly before using.

4️⃣ Assemble the Cake:

Slice the Cake:
Once cooled, slice the sponge cake horizontally into two layers.

Soak the Cake (Optional):
Brush the coffee syrup over the bottom layer for a deep coffee flavor.

Spread Ganache:
Spread a layer of chocolate ganache over the bottom layer. Place the top layer over it and drizzle more ganache on top or leave plain for a minimalist look.

5️⃣ Serve:

Let the cake sit for a few minutes to allow the ganache to set. Slice and serve with a steaming cup of coffee or tea.

💡 Tips:

Add a Creamy Filling: For an extra indulgent cake, layer whipped cream or mascarpone cheese between the layers.
Decorate: Sprinkle cocoa powder, chocolate shavings, or a few coffee beans for a stunning presentation.
Storage: Store at room temperature for 2 days or in the refrigerator for up to 4 days. Bring to room temperature before serving for the best taste.
