12 large shrimp, peeled & deveined 🦐
1 tbsp olive oil 🫒
2 cloves garlic, minced 🧄
1/2 tsp paprika 🌶️
1/2 tsp salt & black pepper 🧂
For the Roasted Broccoli:
1 1/2 cups broccoli florets 🥦
1 tbsp olive oil 🫒
1/2 tsp garlic powder 🧄
1/2 tsp salt & black pepper 🧂
For the Bowl:
2 cups baby spinach 🥬
1/2 cucumber, sliced 🥒
1 tbsp hemp seeds or sesame seeds 🌿
1 tbsp crumbled feta cheese 🧀
👨🍳 Directions:
1️⃣ Roast the Broccoli: Toss broccoli with olive oil, garlic powder, salt & pepper. Roast at 400°F (200°C) for 15 minutes until crispy.
2️⃣ Cook the Shrimp: Heat olive oil in a pan, add shrimp, garlic, paprika, salt & pepper. Cook for 2-3 minutes per side until pink & slightly charred.
3️⃣ Assemble the Bowl: Place baby spinach as the base, add roasted broccoli, sliced cucumber & garlic shrimp.
