Meatloaf with Mashed Potatoes
Ingredients:
For the Meatloaf:
500 g (1 lb) ground beef
250 g (½ lb) ground pork
1 small onion, finely chopped
2 cloves garlic, minced
1 cup breadcrumbs
1 egg
½ cup milk
2 tbsp Worcestershire sauce
1 tbsp ketchup
1 tsp salt
½ tsp black pepper
½ tsp smoked paprika
½ tsp dried oregano
For the Glaze:
½ cup ketchup
2 tbsp brown sugar
1 tbsp apple cider vinegar
1 tsp Dijon mustard
For the Mashed Potatoes:
4 large potatoes, peeled and cubed
½ cup heavy cream or milk
4 tbsp unsalted butter
1 tsp salt
½ tsp black pepper
½ tsp garlic powder (optional)
Directions:
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a large bowl, mix together all the meatloaf ingredients until well combined. Shape the mixture into a loaf and place it on the prepared baking sheet.
In a small bowl, whisk together all the glaze ingredients. Brush half of the glaze over the meatloaf.
Bake for 40 minutes, then brush with the remaining glaze. Bake for another 15-20 minutes, or until the internal temperature reaches 160°F (70°C).
While the meatloaf is baking, prepare the mashed potatoes: Boil the potatoes in a large pot of salted water for 15-20 minutes, or until fork-tender.
Drain the potatoes and mash them with butter, cream, salt, black pepper, and garlic powder until smooth and creamy.
Remove the meatloaf from the oven, let it rest for 5 minutes, then slice and serve with the mashed potatoes.
