Pissaladière – Onion and Anchovy Tart from Provence 🐟🧅❤️🇫🇷
Ingredients:
For the Dough:
• All-purpose flour: 2 cups (250 g)
• Water: ¾ cup (180 ml)
• Olive oil: 2 tbsp (30 ml)
• Salt: ½ tsp (2.5 g)
For the Topping:
• Onions: 4 large, thinly sliced
• Olive oil: 3 tbsp (45 ml)
• Anchovies: 10 fillets
• Black olives: ½ cup (75 g)
• Thyme: 1 tsp (5 g)
• Salt and pepper: to taste
Instructions:
1. Prepare the dough: Mix flour, water, olive oil, and salt until a smooth dough forms. Knead for 5 minutes, then let rest for 30 minutes.
2. Caramelize the onions: Heat olive oil in a skillet. Add sliced onions, thyme, salt, and pepper. Cook on low heat for 30 minutes, stirring occasionally, until golden and sweet.
3. Roll out the dough: Preheat oven to 400°F (200°C). Roll the dough into a thin rectangle or circle.
4. Assemble the tart: Spread caramelized onions over the dough. Arrange anchovies in a crisscross pattern and place an olive in each diamond-shaped section.
5. Bake: Bake for 20-25 minutes, or until the edges are golden and crispy.
6. Serve: Slice and enjoy warm or at room temperature.
