This cheesy sauce is bomb💣 I added it to pasta with some veggies and it was sooo good!!!

Cheese is often the last animal product people give up that marks the transition from vegetarian to vegan.
Luckily, there are so many vegan cheeses on the market these days, it's easier now more than ever to make the switch.
Although I do enjoy a store-bought vegan cheese from time to time, they're not much healthier than their dairy counterparts.
So instead, I make a homemade cheesy sauce that has the umami factor - but without the processed oils.
Directions:
Soak the cashews in hot water for 20-30 minutes. Meanwhile, saute the carrot and onion in a bit of the broth until soft. With the rest of the broth, mix in the cornstarch until dissolved. Drain the cashews and add them to your blender with the carrots, onions and the remaining ingredients. Process on high speed until smooth. Add salt to taste.
This is great for dipping, adding to pasta, pouring over baked potatoes or any and all vegetables. SERIOUSLY
