🥩 Succulent Filet Mignon with Brandy Peppercorn Sauce 🍷

Ingredients
For the Filet Mignon:
2 filet mignon steaks (6–8 oz each)
1 tablespoon olive oil
Salt and freshly ground black pepper, to taste
1 tablespoon unsalted butter (optional, for extra richness)
For the Brandy Peppercorn Sauce:
2 tablespoons brandy (or cognac)
1/2 cup heavy cream
2 tablespoons beef broth
1 tablespoon green peppercorns, crushed
1 tablespoon Dijon mustard
1 teaspoon butter
Salt and freshly ground black pepper, to taste
Instructions
1. Prepare the Filet Mignon:
Remove the filet mignon steaks from the refrigerator and allow them to come to room temperature for 15–20 minutes before cooking.
Pat the steaks dry with a paper towel to remove any excess moisture.
Season both sides of the steaks generously with salt and freshly ground black pepper.
Heat olive oil in a large skillet (preferably cast-iron) over medium-high heat.
Once the skillet is hot, add the steaks and cook for 4–5 minutes per side for medium-rare, or adjust the time to your desired doneness. For medium, cook for 5–6 minutes per side.
If you like, add a tablespoon of butter to the skillet during the last minute of cooking for extra richness and flavor.
Remove the steaks from the skillet and set them aside to rest while you prepare the sauce.
2. Make the Brandy Peppercorn Sauce:
In the same skillet, reduce the heat to medium.
Add the brandy (or cognac) to the pan, scraping the browned bits from the bottom with a wooden spoon. Let the alcohol cook off for 1–2 minutes.
Stir in the heavy cream and beef broth, then add the crushed green peppercorns and Dijon mustard.
Let the sauce simmer for 3–4 minutes, allowing it to thicken slightly.
Stir in 1 teaspoon of butter and season with salt and pepper to taste. Adjust the sauce consistency by adding a little more cream or broth if necessary.
3. Serve:
Place the rested filet mignon steaks on serving plates.
Spoon the brandy peppercorn sauce generously over the steaks.
Serve immediately with your favorite sides, such as mashed potatoes, roasted vegetables, or a simple green salad.
