This No-Bake Black Forest Berry Cheesecake is an elegant twist on the classic Black Forest dessert, combining rich chocolate, creamy cheesecake, and a medley of fresh berries. Ingredients
For the Crust:
2 cups chocolate cookie crumbs (about 24 cookies, finely crushed)
½ cup unsalted butter (melted)
For the Cheesecake Filling:
16 oz cream cheese (softened)
1 cup powdered sugar
1 tsp vanilla extract
1½ cups heavy whipping cream (cold)
¾ cup melted dark chocolate (cooled slightly)
For the Berry Topping:
1½ cups mixed berries (cherries, raspberries, and blackberries, fresh or frozen)
⅓ cup granulated sugar
1 tbsp lemon juice
1 tbsp cornstarch (mixed with 2 tbsp water)

Instructions
1. Prepare the Crust:
Mix the chocolate cookie crumbs with melted butter until fully combined.
Press the mixture firmly into the bottom of a 9-inch springform pan, creating an even layer.
Place in the freezer to set while preparing the filling.
2. Make the Cheesecake Filling:
In a large bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
In a separate bowl, whip the heavy cream to stiff peaks.
Fold the whipped cream into the cream cheese mixture until fully combined.
Gently fold in the melted chocolate until the mixture is smooth and even.
Spread the cheesecake filling over the crust, smoothing the top with a spatula.
Refrigerate for at least 6 hours or overnight to set.
3. Prepare the Berry Topping:
In a saucepan over medium heat, combine the mixed berries, sugar, and lemon juice. Stir occasionally until the berries release their juices.
Add the cornstarch mixture and stir until the topping thickens, about 2–3 minutes.
Remove from heat and let cool completely.
4. Assemble the Cheesecake:
Once the cheesecake is set, remove it from the springform pan and transfer it to a serving plate.
Spread the cooled berry topping over the cheesecake.
