2 boneless, skinless chicken breasts, sliced
2 tbsp olive oil
3 cloves garlic, minced 🧄

4 oz chestnut mushrooms, sliced
½ cup cooked chestnuts, roughly chopped (some reserved for puree) 🌰

2 medium Yukon Gold potatoes, cut into ½-inch cubes
1 tbsp olive oil
3 cloves garlic, minced
Salt & freshly cracked black pepper to taste
4-5 fresh sage leaves

8 oz cremini mushrooms, finely chopped
2 tbsp olive oil
2 cloves garlic, minced
¼ cup fresh basil leaves 🌿
2 tbsp grated Parmesan cheese 🧀
¼ cup heavy cream
¼ cup cooked chestnuts, pureed
1 tbsp lemon juice 🍋
Salt & freshly cracked black pepper to taste

Instructions
1. Marinate the Chicken
In a bowl, toss chicken slices with olive oil, minced garlic, rosemary, thyme, salt, and pepper. Let marinate for at least 15 minutes.
2. Prepare the Crispy Garlic Potatoes with Sage
Preheat oven to 425°F (220°C).
In a bowl, toss potato cubes with olive oil, minced garlic, salt, and pepper.
Spread potatoes in a single layer on a baking sheet and roast for 20 minutes.
Add fresh sage leaves to the baking sheet and continue roasting for another 5-10 minutes, or until potatoes are golden brown and crispy and sage is crisp.
3. Sauté the Chicken and Chestnut Mushrooms
Heat olive oil in a large skillet over medium-high heat.
Add the marinated chicken slices and sauté until browned and cooked through. Remove chicken and set aside.
Add sliced chestnut mushrooms to the skillet and cook until softened and lightly browned. Stir in the chopped roasted chestnuts. Return the chicken to the skillet and toss to combine.
4. Prepare the Creamy Mushroom Pesto Enhanced with Chestnut Puree
Heat olive oil in a skillet over medium heat. Add chopped mushrooms and minced garlic. Cook until softened and have released their liquid, about 5-7 minutes.
Transfer the cooked mushroom mixture to a food processor or blender. Add basil leaves, Parmesan cheese, heavy cream, chestnut puree, and lemon juice.
Blend until smooth and creamy. Season with salt and pepper to taste.
5. Assemble & Serve
Arrange the crispy garlic potatoes with fresh sage on plates or in a bowl.
Top with the sautéed chestnut garlic chicken.
Drizzle generously with the creamy mushroom pesto enhanced with chestnut puree.
