LOBSTER & SCALLOPS IN LEMON HERB BUTTER 🦞🍋✨

Ingredients:
- 1 pound lobster tails, cut in half lengthwise
- 1 pound scallops, patted dry
- 4 tablespoons unsalted butter
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Zest and juice of 1 lemon
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh thyme, chopped
- Salt and black pepper to taste
- Lemon wedges for serving

Instructions:

1. Begin by preparing the lobster tails. Using kitchen scissors, carefully cut down the center of the shell to expose the meat. Pull the lobster meat slightly out from the shell, leaving it attached at the base. This will allow the meat to cook evenly and absorb the flavors.

2. Next, ensure your scallops are dry by patting them with paper towels. This step is crucial for achieving a nice sear.

3. In a large skillet, heat the olive oil and 2 tablespoons of butter over medium-high heat. Allow the butter to melt and bubble, enhancing its flavor.

4. Once the butter is sizzling, add the scallops to the skillet in a single layer, making sure not to overcrowd them. Cook for about 2-3 minutes on each side, or until they develop a beautiful golden-brown crust. Season with salt and pepper. Once cooked, remove the scallops from the pan and set them aside.

5. In the same skillet, reduce the heat to medium and add the remaining 2 tablespoons of butter. Once melted, add the minced garlic and cook until fragrant, about 30 seconds. Be careful not to let it brown.

6. Add the lobster tails to the skillet, cut side down. Cook for about 5-6 minutes, basting them with the garlic butter. Then flip them over and cook for an additional 3-4 minutes until the lobster is opaque and tender.

7. Once the lobster is nearly finished cooking, add the scallops back into the skillet to warm them through. Drizzle with lemon juice and sprinkle lemon zest, parsley, and thyme over the top, giving it all a gentle toss in the pan to mix the flavors.

8. Serve the lobster and scallops immediately, garnished with extra herbs and lemon wedges on the side for squeezing over. Enjoy the burst of citrus and herb flavors with the rich, buttery goodness!
