Loaded Steak Quesadillas 🌮🥩🧀
These Loaded Steak Quesadillas are filled with tender steak, melted cheese, sautéed veggies, and seasoned to perfection. They're crispy on the outside, cheesy and flavorful on the inside—making them the ultimate meal for any day of the week!

Ingredients:
🥩 For the Steak Filling:

1 lb flank steak or skirt steak

1 tbsp olive oil

1 tbsp lime juice

1 tsp ground cumin

1 tsp chili powder

1 tsp garlic powder

½ tsp smoked paprika

Salt and pepper, to taste

🌽 For the Veggies:

1 medium onion, thinly sliced

1 bell pepper (any color), thinly sliced

1 cup corn kernels (fresh, frozen, or canned)

1 tbsp olive oil

🧀 For the Quesadilla Assembly:

4 large flour tortillas

2 cups shredded Mexican cheese blend (or cheddar, Monterey Jack, or a combination)

1/2 cup fresh cilantro, chopped (optional)

Sour cream, guacamole, or salsa for dipping

Instructions:
1️⃣ Marinate the Steak:
In a small bowl, mix together the olive oil, lime juice, ground cumin, chili powder, garlic powder, smoked paprika, salt, and pepper.

Coat the flank steak with the marinade, cover, and let it sit for at least 30 minutes to allow the flavors to absorb.

2️⃣ Cook the Steak:
Heat a grill pan or skillet over medium-high heat and add the marinated steak.

Cook the steak for 3-4 minutes per side for medium-rare, or longer if you prefer it well-done.

Once cooked, remove the steak from the pan and let it rest for a few minutes before slicing it thinly against the grain.

3️⃣ Sauté the Veggies:
In the same skillet, add 1 tbsp olive oil and sauté the onion, bell pepper, and corn over medium heat for about 5-7 minutes, until the veggies are softened and slightly caramelized. Set aside.

4️⃣ Assemble the Quesadillas:
Heat a large skillet over medium heat or preheat a griddle.

Place a flour tortilla on the skillet and sprinkle with a layer of shredded cheese.

Top with more shredded cheese, then place a second tortilla on top.

5️⃣ Cook the Quesadillas:
Cook the quesadilla for 2-3 minutes per side until the tortillas are golden brown and the cheese is melted.

Remove from the skillet and slice into wedges.
