🇮🇹 Caponata Siciliana (Sicilian Eggplant Stew)
A sweet and tangy Sicilian vegetable dish with eggplant, tomatoes, and capers.
Ingredients:
• 2 medium eggplants, cubed
• 2 tomatoes, chopped
• 1 onion, sliced
• 2 celery stalks, chopped
• 3 tbsp capers
• 1/4 cup green olives, pitted
• 2 tbsp red wine vinegar
• 1 tbsp sugar
• 4 tbsp olive oil
• Salt and pepper to taste
Instructions:
🥄 Heat olive oil in a pan and fry eggplant cubes until golden. Set aside.
🧅 In the same pan, sauté onions and celery until soft.
🍅 Add tomatoes and cook until they break down.
🫒 Stir in capers, olives, vinegar, and sugar. Simmer 5 minutes.
🍆 Return eggplant to pan, mix well, and cook for 10 more minutes.
❄️ Let cool and serve at room temperature.
