🇮🇹 Baccalà alla Vicentina (Venetian-Style Salt Cod) 🐟🧄

A creamy, slow-cooked cod classic from the Veneto region.

Ingredients:
• 500g salt cod (baccalà), soaked for 48 hours and rinsed
• 2 large onions, finely sliced
• 2 anchovy fillets
• 150ml olive oil
• 250ml whole milk
• 2 tbsp grated Parmesan cheese
• 2 tbsp flour
• Salt and pepper
• Fresh parsley (optional)

Instructions:
1️⃣ Sauté onions and anchovies in half the olive oil until soft.
2️⃣ Dredge the soaked cod in flour. Place it over the onions.
3️⃣ Add milk, Parmesan, salt, and pepper. Cover with remaining oil.
4️⃣ Simmer gently, covered, for 3–4 hours—don’t stir!
5️⃣ Serve warm with creamy polenta or rustic bread.
