Rustic Green Spaghetti with Shrimp, Grilled Sausage, Garlic, and Chili
Ingredients:
Green Spaghetti:
12 oz (340g) spaghetti (fresh or regular)
1 tablespoon olive oil (for the pasta)
1 tablespoon fresh parsley, chopped
1 tablespoon fresh basil, chopped
1 teaspoon garlic powder
Salt and pepper to taste
Shrimp:
12 large shrimp, peeled and deveined
1 tablespoon olive oil
1 teaspoon smoked paprika
Salt and pepper to taste
Grilled Sausage:
2 sausages (Italian, chorizo, or your choice)
1 tablespoon olive oil for grilling
Garlic & Chili:
3 whole garlic cloves, peeled
1 red chili pepper, sliced
1 tablespoon olive oil (for sautéing)
Garnishes:
A handful of fresh parsley, chopped
Grated Parmesan (optional)
Red chili pepper slices (optional)
Instructions:
Cook the Spaghetti:
Bring a large pot of salted water to a boil. Add the green spaghetti and cook according to the package instructions, typically 8-10 minutes for al dente.
Drain the pasta, reserving about 1 cup of pasta water. Toss the spaghetti with olive oil, garlic powder, parsley, basil, salt, and pepper. Set aside.
Prepare the Shrimp:
Heat a large skillet over medium heat and add 1 tablespoon of olive oil.
Season the shrimp with smoked paprika, salt, and pepper. Once the oil is hot, add the shrimp and cook for 2-3 minutes per side, or until pink and slightly charred. Remove from the skillet and set aside.
Grill the Sausage:
Preheat a grill or grill pan over medium-high heat. Brush the sausages with olive oil.
Grill the sausages for 6-8 minutes, turning frequently until golden-brown and cooked through. Slice the sausages into bite-sized pieces and set aside.
Sauté Garlic & Chili:
In the same skillet used for the shrimp, add 1 tablespoon of olive oil. Toss in the whole garlic cloves and sliced red chili pepper. Sauté for 1-2 minutes until fragrant, but make sure not to burn the garlic.
Assemble the Dish:
Add the cooked spaghetti to the skillet with the garlic and chili. Toss to combine, ensuring the pasta is coated with the garlic oil. Add a little reserved pasta water if the pasta seems dry.
Add the grilled sausage and shrimp to the skillet, tossing gently to mix everything together.
Serve:
Plate the spaghetti and top with the shrimp and sausage. Garnish with freshly chopped parsley and grated Parmesan (if desired). Serve with extra chili slices for added heat.
