Cilantro Lime Chicken with Roasted Pepper Penne
Zesty Cilantro Lime Chicken Penne with Roasted Peppers
Ingredients:
12 oz penne pasta
1 lb boneless, skinless chicken breasts, diced
2 tablespoons olive oil
1 red bell pepper, sliced
1 yellow bell pepper, sliced
3 cloves garlic, minced
1/4 cup fresh cilantro, chopped
2 tablespoons fresh lime juice
1 tablespoon lime zest
1/2 cup chicken broth (low sodium)
1/2 cup grated Parmesan cheese
1 teaspoon cumin powder
1/2 teaspoon smoked paprika
Salt and black pepper to taste
Fresh cilantro for garnish
Directions:
Cook the penne pasta according to package instructions. Drain and set aside, reserving 1/2 cup of pasta water.
In a large skillet over medium heat, heat olive oil. Add diced chicken and season with cumin, paprika, salt, and pepper. Cook until browned and fully cooked, about 6-7 minutes. Remove and set aside.
In the same skillet, add the sliced bell peppers and garlic. Sauté for 3-4 minutes until softened.
Return the chicken to the skillet. Add chicken broth, lime juice, and lime zest. Simmer for 2-3 minutes to combine flavors.
Toss in the cooked penne pasta, Parmesan cheese, and chopped cilantro. Mix well, adding reserved pasta water as needed to create a creamy sauce.
Serve hot, garnished with additional fresh cilantro.
