Lemon Crumb Bars πβ¨
Ingredients:
2 cups all-purpose flour πΎ
1/2 cup granulated sugar π
1/4 teaspoon salt π§
3/4 cup unsalted butter, melted π§
1 cup granulated sugar π
2 tablespoons all-purpose flour πΎ
1/2 teaspoon baking powder π₯
2 large eggs π₯
1/4 cup fresh lemon juice π
1 teaspoon lemon zest πΏ
Directions:
1. Preheat your oven to 350Β°F (175Β°C) and line an 8x8-inch baking pan with parchment paper.
2. In a bowl, mix together 2 cups flour, 1/2 cup sugar, and 1/4 teaspoon salt until well combined.
3. Pour in 3/4 cup melted butter and mix until a crumbly dough formsβthis will be your crust!
4. Now, press 2/3 of that delicious mixture into the bottom of your prepared baking pan to form the crust. Set aside the remaining 1/3 for the crumble topping.
5. Bake the crust for about 15 minutes, or until itβs lightly golden and smelling heavenly.
6. While that's baking, whisk together 1 cup sugar, 2 tablespoons flour, and 1/2 teaspoon baking powder in a separate bowl.
7. Add in 2 large eggs, 1/4 cup fresh lemon juice, and 1 teaspoon lemon zest, whisking until everything is nice and smooth.
8. Once your crust is ready, pour the luscious lemon filling over it and spread it evenly.
9. Top it off by sprinkling the reserved crumble mixture over the lemon filling.
10. Bake for another 20-25 minutes, until the filling is set and the topping is golden brown.
11. Finally, let the bars cool completely before slicing them into mouthwatering squares.
