🇮🇹 Pasta al Forno con Melanzane (Baked Pasta with Eggplant)
Creamy, cheesy, and packed with flavor—this Sicilian-inspired pasta bake is a hearty vegetarian favorite!

📝 Ingredients:
• 2 large eggplants, sliced
• 12 oz penne pasta
• 1 1/2 cups tomato sauce
• 1 cup mozzarella, shredded
• 1/2 cup grated Parmesan
• 2 tbsp olive oil
• 1 clove garlic, minced
Salt and pepper
• Fresh parsley (for garnish)

👩‍🍳 Instructions:
1️⃣ Slice eggplants and pan-fry in olive oil until soft and golden. Set aside.
2️⃣ Cook penne pasta until al dente. Drain.
3️⃣ In a large bowl, combine pasta with tomato sauce, garlic, mozzarella, and half the Parmesan. Add eggplant slices and mix gently.
4️⃣ Pour into a greased baking dish. Top with remaining Parmesan.
5️⃣ Bake at 180°C (350°F) for 20–25 minutes until bubbly and golden.
6️⃣ Garnish with fresh parsley and serve hot.
