Vibrant & Easy Homemade Blueberry Almond Chia Seed Jam Recipe 🫐✨💜

Ingredients
2 cups (300g) fresh or frozen blueberries
2 tbsp (30ml) maple syrup, agave nectar, or keto-friendly sweetener (adjust to taste)
1 tbsp (15ml) fresh lemon juice
1/4 tsp almond extract (optional, enhances flavor)
2 tbsp (25g) chia seeds

Directions
1. Combine the blueberries, sweetener, and lemon juice in a medium saucepan.
2. Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring occasionally.
3. Cook for 5-7 minutes, mashing some of the blueberries with the back of a spoon or a potato masher to release their juices and achieve desired consistency. Leave some whole for texture if you like.
4. Once the blueberries have softened and the mixture is juicy, remove the saucepan from the heat.
5. Stir in the almond extract (if using) and the chia seeds until well combined.
6. Let the mixture sit for at least 10-15 minutes. The chia seeds will absorb the liquid and thicken the jam considerably. Stir again.
7. If the jam isn't thick enough for your liking, you can add another 1/2 to 1 tsp of chia seeds, stir, and let sit longer. Remember it will continue to thicken as it cools, especially in the fridge.
8. Once cooled to room temperature, transfer the chia jam to a clean jar with a tight-fitting lid.
9. Store the jam in the refrigerator. It should last for up to 1-2 weeks.
