Garlic Butter Shrimp Zoodles

Ingredients:

1 pound large shrimp, peeled and deveined
2 medium zucchini, spiralized or julienned into noodles (zoodles)
4 tablespoons butter
4 cloves garlic, minced
1/4 cup dry white wine (optional, can substitute with chicken broth)
1/4 cup chopped fresh parsley
2 tablespoons lemon juice
1/4 teaspoon red pepper flakes (optional)
Salt and freshly ground black pepper to taste
2 tablespoons grated Parmesan cheese (optional)

Instructions:

1. Melt the butter in a large skillet over medium heat. Add the minced garlic and cook for about 1 minute, or until fragrant, being careful not to burn the garlic.
2. Add the shrimp to the skillet and cook for 2-3 minutes per side, or until pink and cooked through. Remove the shrimp from the skillet and set aside.
3. If using white wine, add it to the skillet and bring to a simmer, scraping up any browned bits from the bottom of the pan. Let it reduce slightly for about 1-2 minutes. If not using wine, skip this step and proceed to the next.
4. Add the zoodles to the skillet and cook for 2-3 minutes, or until they are tender-crisp. You may need to add a tablespoon or two of water if the zoodles become too dry.
5. Stir in the parsley, lemon juice, and red pepper flakes (if using). Season with salt and pepper to taste.
6. Return the cooked shrimp to the skillet and toss to combine with the zoodles and sauce.
7. Serve immediately, topped with grated Parmesan cheese (if using).
